they are a little on the flat side, however — i LOVED how the color came out. they are still a work in progress, and i didn’t have any time to put icing on any of them but they tasted great. i’ll retry this recipe and won’t be too lazy to whip up some cream cheese frosting so i can post a better looking picture. HA!
i found a recipe for this and thought i would try it out — i’m just going to say, it tasted as awesome as it looks! :)

So I haven’t been baking nor blogging for quite some time and since I didn’t have work this weekend, I thought it would be nice to do a little of both! So enjoy the carrot cupcakes and few red velvet cupcakes! Which, by the way was a more healthier option since I skipped out on the vegetable oil and replaced it with applesauce - my new baking friend lol. And ps. my sister loves to crochet — hence the yarn theme.
all i have to say is: CARROT CAKE. yum!!
